The Collectramatic Pressure Fryer also uses a patented clamshell basket to maintain product separation during the cooking process with no attendant labor. The fryer requires minimal hood space of 4.72 square feet, and low maintenance with only 4 moving parts.
The Collectramatic Pressure Fryer has an extended cold zone that allows for extended cooking oil life cycles. The 18" cold zone collects all cooking debris and completely removes it from the heating elements. This deep cold zone is 100-150 degrees cooler than the cooking oil in the cooking zone and allows for all day gravity filtration. Gravity filtration allows each fryer to cook up to 240 lbs. of chicken without manual filtration.
The Collectramatic Pressure Fryer uses a patented 5-shelf clamshell basket, designed to keep product separated during the pressure frying process and ensure non-attendant handling. The clamshell basket ensures even coverage and keeps all product completely submerged under the cooking oil during the cooking process.
The Collectramatic Pressure Fryer is available as an open fryer as well using the same technology and design as the pressure fryer. The Collectramatic Open Fryer accommodates all fried food products that do not require pressure frying.
