The Winston Collectramatic Frying System is offered as a "Pressure Fryer for chicken, and the Winston Open Fryer for fish. The system is designed to produce tender, moist, yet slightly crispy pressure fried chicken and deep fried fish. Both frying systems are micro-processor controlled with pre-set cooking times and cooking temperatures in order to produce the highest quality fried foods consistently day-in and day-out.
The Collectramatic Pressure Fryer and Open Fryer have an extended cold zone that removes cooking debris from the hot cooking zone to an 18" collector. This extended cold zone allows for cleaner cooking and less stress on the cooking oil. The cooking oil care program includes daily removal of all debris in the collector and machine filtration of the cooking oil for the removal of other cooking oil impurities. Cooking oil management and maintenance is the key to the highest quality fried foods.
The Collectramatic Pressure Fryer uses a patented 5-shelf clam-shell basket, designed to keep product separated during the pressure frying process and ensure non-attendant handling. The clam-shell basket ensures even coverage and keeps all product completely submerged under the cooking oil during the cooking process.
The Collectramatic Pressure Fryer is available as an open fryer as well using the same technology and design as the pressure fryer. The Collectramatic Open Fryer accommodates all fried food products that do not require pressure frying.
